If you carrot all about your health, then think about including this juice in your diet!
Okay, all the silliness set aside (cut to eye rolling here), carrots have some spectacular health benefits which have made them a staple in the juicing world.
Carrot juice has been used for decades in Gerson Therapy for cancer treatment. There are many studies out there sharing how they help. My sister in law recently visited and was drinking carrot juice every day as part of a natural treatment for her thyroid cancer, and she’d had some success over the past year in reducing the size of her tumor. This got my attention.
There are other fascinating reasons carrot juice can be so good for us. Recent studies have shown that drinking carrot juice improves markers of oxidative stress due to the high levels of carotenoids and may protect the cardiovascular system. And so it follows: I heart carrots.
Today’s recipe is a unique approach to getting your carrot juice in. Here I am using it as a base for my overnight oats, and since carrot cake is my absolute favorite cake ever, here you go.
3/4 cup fresh carrot juice
1/4 cup full fat coconut milk
1/4 up rolled oats
1 grated apple
2 tbs raisins
1 tbs chia seeds
1/2 vanilla bean, sliced lengthwise & scraped
1/2 tsp cinnamon
1/8 tsp each nutmeg & allspice
Combine all ingredients in a bowl or mason jar, stirring occasionally for 10 minutes for the chia seeds to set. Store in the fridge overnight and enjoy a healthy breakfast!
*Note: you can certainly add a sweetener of your choice, but I think the carrot juice, apple, and raisins are plenty sweet!

P.S. I should probably mention that if you consume a lot of carrots, you will start to turn orange!! I have visions of oompa loompas in my head now. Your skin will definitely take on a yellower pigment, so keep that in mind.
