Waking up to those chilly Fall mornings? It’s the perfect season for a hot breakfast smoothie bowl with all the warming spices and colors!
All those yummy seasonal veggies aren’t just for holiday meals – they make a cozy comfort breakfast as well! This nourishing and soothing bowl is simple and satisfying and will keep you energized all morning.
1 organic yam, peeled & chopped
2 cups water
1/2 tbs collagen powder
1/2 tsp vanilla bean ghee (I like 4th & Heart brand)
1/2 tsp mixed medicinal mushroom powder (try Four Sigmatic blends)
1/4 tsp cinnamon
1/4 tsp ginger
1/8 tsp cardamom
5 drops vanilla stevia
1 tbs almond butter, for topping
1 tbs granola, for serving
1 tsp honey, to drizzle
Simmer the sweet potato chunks in water until soft. Drain, but reserve a little of the water and add to a blender. Add the remaining ingredients and blend well. Transfer to a bowl and top with the almond butter, granola, drizzled honey, and dust with extra cinnamon.
This would make a great side dish, but it’s filling enough as a meal. The collagen adds easily absorbed protein and is also anti-inflammatory. The mushroom blend includes some of my favorites like chaga, reishi, cordyceps and lion’s mane.
